In the radiant fall of 2022 we helped with the season ending harvest of a blend of mature apples from Stines Orchard here in Monkton, Vermont. The apples were crushed and pressed at the orchard. Like Basque style cider the pressed juice was racked into fresh Chardonnay wine barrels and allowed to ferment naturally over the cool dark winter months. In the spring of 2023 we blended the barrels, each slightly different and unique in its own way from the natural fermentation. This is the result. Our first gold cider is fresh, crisp, tart and sparkling dry. It has a funky tannic characteristic similar to natural wine. Naturally conditioned in the bottle for 12-months. A perfect complement to rich food, funky cheese or enjoyed on its own.
