This spontaneously fermented American Wild Ale has been in the works for four years now, making it the longest aged beer House of Fermentology has put forth yet, just ahead Spontaneous Dot - Elderberry, which we released back in April. Brewed in the fall of 2016, we began with barley from from , raw wheat from, and a bit of aged hops from. The wort was then driven to the Boyer's Orchard in Monkton, right next to the original malthouse and home of. The wort sat here overnight in a coolship of sorts, thus providing time and space for the wild yeast and bacteria of the land to inoculate the wort as it rested and temps cooled. This process took place again in 2017, and after each vintage fermented and developed, they were blended together in the fall of 2018, when the beer was moved onto blueberries from Isham Family Farm in Williston. Spontaneous Dot - Blueberry was bottled in the Fall of 2019 with BTV Honey from Bill Mares of House of Fermontology’s apiary.⠀
