The latest addition to House of Fermentology’s array of American Wild Ales is a two year blended Golden Sour fermented and aged in oak, landing at 5% abv. Following primary fermentation, Todd pitched in his own Vermont Wildflower Honey, guava and lemon zest for secondary fermentation. Tangy and fruit forward, Perpetual Dot presents notes of ripe strawberries, mango and honeydew melon right up front. On the finish you’ll find floral notes and subtle tannin characteristics resulting from the oak and fruit fermentation.
