Green Dot was first released in 2016 as a Dry Hopped Golden Sour. In early 2020, after moving to our new home, we decided to change it up a bit. We brewed a split base wort of malted Pilsen and wheat from Peterson Quality Malts (@vermontmalt) and fermented it in neutral oak. When hop season was upon us, we filled our lightly toasted Acacia wood tank with fresh Cascade wet hops from Champlain Valley Hops (@champlain.valley.hops). Harvested early in the morning of September 4th, the hops were blended with oak-aged beer only a couple of hours after picking. After a few days' soak time, the beer and the hops became one, giving way to a beer with sparkling notes of lemon and herb, washed in a tart soft texture of hop freshness and lime.⠀
We gave the beer a single, hand-painted, green dot. This is how I marked bottles in the early days of developing our beer when House of Fermentology was only a thought. Simple and beautiful. We thought this early approach was only appropriate as we settle into our new home and look forward to a better 2021. - Todd Haire
